How to Make Your Own Coffee Ice Cream

Everyone loves ice cream, especially when it’s caffeinated and has a nice dose of coffee in it. If you prefer to make your own rather than spending money on ice cream on the shelf, that’s a fantastic decision. You’ll get to control the ingredients that you use and can toss in extras as often as you want. There are several different ways to make ice cream and which is best for you will depend on your preferences. We’ll look at four different options, so you can make the best possible decision.

The recipes here are for a vanilla ice cream base, but we’ll share coffee ice cream recipes once you have the basics down.

Ingredients for a Custard Ice Cream

  • 3 cups of whole milk
  • 1 cup of sugar
  • 8 egg yolks
  • 1 teaspoon vanilla extract
  • A pinch of salt

Ingredients for No Churn Ice Cream

  • 2 cups of cold heavy cream
  • 14 ounces of sweetened condensed milk
  • 2 teaspoons of vanilla extract
  • A pinch of salt

Making a Custard Ice Cream Base

The first step is going to be simmering your milk. Take the three cups of milk and add it to a pot on the stove. You want to heat the milk for around five minutes on medium-high or as long as it takes to begin to simmer. When you see bubbles on the surface, turn off the heat and let the milk cool. You’ll want to be sure that the milk doesn’t boil over so pay attention as it comes to a simmer. You can also choose to use heavy cream as an alternative to the milk if you prefer.

Your next step is to combine the sugar, eggs, and salt in a bowl. Get a whisk and combine all of the ingredients until the mixture forms a thick paste.

After the milk is cool, add it into the egg mixture. Slowly pour it in with a steady stream. Continue stirring until everything is well incorporated.

Now you want to take the mixture and put it on the stove and heat it until it is 170 degrees Fahrenheit. You will want to stir the bottom of the pot as it heats and keep it on heat until it reaches the appropriate temperature.

The next step is to get a large bowl and fill it with ice. Another bowl should be sat in that bowl and a wire strainer goes over the top bowl. The ice cream base should be poured through the strainer and into the bowl, which will eliminate any lumps. At that point, you can add the vanilla and stir the entre mixture.

This next part is easy. Cover your bowl with plastic wrap and leave it over the ice. You want to leave it for at least 20 minutes. You can also choose to put it in the refrigerator and chill it for at least three hours, instead.

Coffee Ice Cream

Mixing with an Ice Cream Maker

If you have an electric ice cream maker, you want to freeze the bowl to the maker overnight. You want it to be entirely frozen or the process will not work correctly. So, take your time and be certain before moving on to the other steps.

After the bowl is frozen, remove it and put it back inside your ice cream maker. Get the mixing arm attached as well at this point. You’re almost ready to start the churning process.

Before you start churning the mix, you want to turn on the ice cream maker. Then you can slowly add the base and churning can begin. Make sure you place the lid on top while it does its work.

Depending on the machine, it might take 30 minutes or so to complete the churning process. Consult your manual to be sure of the proper process and follow the instructions.

At this point, you can eat the ice cream if you like a soft texture. If not, you will want to remove the ice cream to another container. Top it with a lid and freeze the ice cream for a few hours and you’re done.

Churning By Hands

If you do not have an ice cream maker, you can make the ice cream by hand. Make sure that you have a shallow pan or bowl that is freezer safe before starting the process. Take that container and place it in the freezer to chill it for a few hours before starting with making your base into an ice cream.

After the container is chilled properly, you can transfer the base to it and cover it. Place it back into the freezer for about 30 minutes so the ice cream starts to harden.

Next, remove the container form the freezer. You’ll want to take an electric hand mixer on medium speed to mix up the ice cream. This will help give it a creamy texture and break up any lumps. For those who have no mixer, you can do this step with a wooden spoon, but it will take more time and effort.

Once you’ve brought the ice cream to a creamier texture, put it back into the freezer. You will take it out 30 minutes later and start mixing again. You may need to do this four more times to get ice cream that is smooth and creamy.

If the ice cream won’t be consumed immediately, place it into a airtight container. Store it in your freezer until you want to eat it.

Mixing No Churn Ice Cream

Those who prefer a no churn ice cream will want to have a 9 x 5 stainless steel loaf pan that is about 3 inches deep. With this method, the pan will need to chill in the freezer for an hour or longer.

Take out a medium bowl and add together the sweetened condensed milk, salt, and vanilla extra. Mix with a whisk until everything is blended well and then set this to the side.

Now, you want to take your heavy cream and pour it into a stand mixer. Whip the cream until you get stiff peaks at medium-high speed. This will take approximately five minutes. If you don’t have access to a stand mixer, an electric mixer or whipping by hand is also possible.

The next step is to move half of the cream into the bowl with the condensed milk. A rubber spatula will allow you to gentle fold it into the mixture to incorporate it. Be careful not to mix too much, as it will remove air from the cream.

Your next step is to take the next mixture and add it to the rest of your whipped cream. You’ll fold it in until it is well blended. Make sure to fold, not stir, to ensure the right texture in the end.

Use your spatula to move the ice cream mixture into your chilled pan and then cover it with plastic wrap. Place the pan in your freezer and let it freeze for about two hours.

Check on the pan to see what consistency it is, then cover and freeze it again. You may need to freeze the container for another three hours to have solid ice cream.

Coffee Ice Cream Recipes

There are a few things you need to know before making your first batch of delicious coffee ice cream. These things relate to the beans you use, the grind you choose, and the brew you select. We’ll share some tips that will ensure you get the perfect ice cream each and every time you step into the kitchen and make it.

Type of Beans to Use

What you want to avoid is using super inexpensive and low-quality coffee beans. Take the plunge and buy the good stuff. Freshly roasted and ground beans will offer a better tasting ice cream in the end. Don’t use old beans, make sure they are fresh. That said, you don’t need the most expensive beans on the shelf, either. Something in the middle will do just fine. Choose your roast based on your own preferences. A dark roast is often suggested, but it can be bitter for some, so feel free to experiment.

Type of Grind to Select

This is somewhat open to taste, as well. When you choose a medium grind, you’ll get plenty of that coffee taste but will be able to easily filter out the ground. If you want to have some grounds in your ice cream, strain with a filter that has a coarser mesh. You can use whole beans, but that takes a lot of time and effort. It’s up to you whether you want to attempt that, but it will require a much larger amount of coffee to get the taste you want.

Type of Brew to Choose

When you look at various coffee ice cream recipes, many of them will ask you to steep the grounds in milk and cream. This will be followed by tempering the liquid in sugar and egg yolks. This is a pretty considerable effort and it can make a giant mess in your kitchen. It’s also not needed for great ice cream. Instead, you can take your egg yolks and sugar, whisk in the coffee grounds, and add your cream and milk cold. The entire mixture can be heated in a single pot.

Milky Coffee Ice Cream

If you are a fan of coffee with plenty of milk and sugar, this recipe will be right up your alley. However, if you prefer a more robust coffee flavor, you may want to try one of the following recipes. This one is simple and is done in an ice maker, but you can choose an alternative method as explained above.

Ingredients:

  • 2 cups of heavy cream
  • 1 cup of whole milk
  • 6 large egg yolks
  • ½ cup sugar
  • 2 tablespoons coffee grounds
  • A pinch of salt

Directions:

First, whisk together the coffee, egg yolks, and sugar in a heavy saucepan. Next, mix in the milk and cream with the yolks until everything is incorporated fully.

Put your pot on the stove and heat to medium-low heat. You’ll want to whisk the mixture as it cooks until the temperature reaches 170 degrees Fahrenheit. At this time, add in the salt.

Strain the mixture before chilling in an ice bath until very cold (about 40 degrees). Use your ice cream maker to churn, then transfer into a container to freeze for at least four hours prior to serving.

Robust Coffee Ice Cream

This recipe gives a large dose of coffee with less ice cream. This makes it nice and creamy but not overly rich. Those who appreciate iced coffee will find this option delectable.

Ingredients:

  • 1 ½ cup heavy cream
  • 1 ½ cup whole milk
  • 6 large egg yolks
  • ¾ cup sugar
  • 5 tablespoons coffee grounds
  • A pinch of salt

Directions:

Use a heavy-bottomed saucepan to whisk together the coffee, sugar, and yolks until fully combined. Next, add the milk and cream and whisk until incorporated.

Over medium-low heat, cook the mixture while whisking regularly. Heat until the mixture reaches a temperature of 170 degrees Fahrenheit.

Strain the custard through fine mesh and chill until quite cold (about 40 degrees). Churn using your ice cream maker, then transfer the mixture into an airtight container before freezing for at least four hours more.

Cookies and Cream and Coffee Ice Cream Recipe

Love coffee? Love cookies? This ice cream is a fantastic dessert to try for you. It has a few more ingredients than the other recipes we’ve shared but it’s still simple enough to make if you closely follow the instructions.

Ingredients:

  • 2 cups heavy cream
  • 1 ½ cups crushed Oreo cookies
  • 1 cup whole milk
  • 7 egg yolks
  • 1 half cup and 2 tablespoons sugar
  • 4 teaspoons ground coffee
  • ½ teaspoon salt
  • ¼ teaspoon vanilla extract
  • 1 vanilla bean, split and scraped

Directions:

In a heavy saucepan, bring milk and cream to a simmer. Add the vanilla bean and cover the mixture. Allow it to steep for 30 minutes. Remove the vanilla pod and discard or save for later use.

Whisk sugar, egg yolks, and coffee in a medium bowl until think and pale in color. Add ½ of the mixture from the stove into the egg mixtures and whisk until combined. Add the yolk mixture into the saucepan.

Over a medium-low heat, cook the ingredients while frequently whisking to prevent burning. Keep heating until the mixture reaches 170 degrees Fahrenheit before you remove it from the heat and stir in salt.

Use a fine mesh strainer to strain the mixture then chill in the refrigerator or an ice bath until very cold (around 40 degrees). Place in the ice cream maker and churn as the directions suggest. Add the cookies during the last minute of churning. Transfer into a container to harder in the freezer.
