You’ll get to control the ingredients that you use and can toss in extras as often as you want. There are several different ways to make ice cream and which is best for you will depend on your preferences. We’ll look at four different options, so you can make the best possible decision.

The recipes here are for a vanilla ice cream base, but we’ll share coffee ice cream recipes once you have the basics down.
Ingredients for a Custard Ice Cream
- 3 cups of whole milk
- 1 cup of sugar
- 8 egg yolks
- 1 teaspoon vanilla extract
- A pinch of salt
Ingredients for No Churn Ice Cream
- 2 cups of cold heavy cream
- 14 ounces of sweetened condensed milk
- 2 teaspoons of vanilla extract

Making a Custard Ice Cream Base
The first step is going to be simmering your milk. Take the three cups of milk and add it to a pot on the stove. You want to heat the milk for around five minutes on medium-high or as long as it takes to begin to simmer. When you see bubbles on the surface, turn off the heat and let the milk cool. You’ll want to be sure that the milk doesn’t boil over so pay attention as it comes to a simmer. You can also choose to use heavy cream as an alternative to the milk if you prefer.

The next step is to get a large bowl and fill it with ice. Another bowl should be sat in that bowl and a wire strainer goes over the top bowl. The ice cream base should be poured through the strainer and into the bowl, which will eliminate any lumps. At that point, you can add the vanilla and stir the entre mixture.
This next part is easy. Cover your bowl with plastic wrap and leave it over the ice. You want to leave it for at least 20 minutes. You can also choose to put it in the refrigerator and chill it for at least three hours, instead.
Mixing with an Ice Cream Maker
If you have an electric ice cream maker, you want to freeze the bowl to the maker overnight. You want it to be entirely frozen or the process will not work correctly. So, take your time and be certain before moving on to the other steps.
After the bowl is frozen, remove it and put it back inside your ice cream maker. Get the mixing arm attached as well at this point. You’re almost ready to start the churning process.
Before you start churning the mix, you want to turn on the ice cream maker. Then you can slowly add the base and churning can begin. Make sure you place the lid on top while it does its work.
Depending on the machine, it might take 30 minutes or so to complete the churning process. Consult your manual to be sure of the proper process and follow the instructions.
At this point, you can eat the ice cream if you like a soft texture. If not, you will want to remove the ice cream to another container. Top it with a lid and freeze the ice cream for a few hours and you’re done.
Churning By Hands
If you do not have an ice cream maker, you can make the ice cream by hand. Make sure that you have a shallow pan or bowl that is freezer safe before starting the process. Take that container and place it in the freezer to chill it for a few hours before starting with making your base into an ice cream.
After the container is chilled properly, you can transfer the base to it and cover it. Place it back into the freezer for about 30 minutes so the ice cream starts to harden.
Next, remove the container form the freezer. You’ll want to take an electric hand mixer on medium speed to mix up the ice cream. This will help give it a creamy texture and break up any lumps. For those who have no mixer, you can do this step with a wooden spoon, but it will take more time and effort.
Once you’ve brought the ice cream to a creamier texture, put it back into the freezer. You will take it out 30 minutes later and start mixing again. You may need to do this four more times to get ice cream that is smooth and creamy.
If the ice cream won’t be consumed immediately, place it into a airtight container. Store it in your freezer until you want to eat it.
Mixing No Churn Ice Cream
Those who prefer a no churn ice cream will want to have a 9 x 5 stainless steel loaf pan that is about 3 inches deep. With this method, the pan will need to chill in the freezer for an hour or longer.
Take out a medium bowl and add together the sweetened condensed milk, salt, and vanilla extra. Mix with a whisk until everything is blended well and then set this to the side.
Now, you want to take your heavy cream and pour it into a stand mixer. Whip the cream until you get stiff peaks at medium-high speed. This will take approximately five minutes. If you don’t have access to a stand mixer, an electric mixer or whipping by hand is also possible.
The next step is to move half of the cream into the bowl with the condensed milk. A rubber spatula will allow you to gentle fold it into the mixture to incorporate it. Be careful not to mix too much, as it will remove air from the cream.
Your next step is to take the next mixture and add it to the rest of your whipped cream. You’ll fold it in until it is well blended. Make sure to fold, not stir, to ensure the right texture in the end.
Use your spatula to move the ice cream mixture into your chilled pan and then cover it with plastic wrap. Place the pan in your freezer and let it freeze for about two hours.
Check on the pan to see what consistency it is, then cover and freeze it again. You may need to freeze the container for another three hours to have solid ice cream.
